This Caroliva balsamic vinegar is made out of the unique Spanish Pedro Ximenez sherry wine and grapes that are sun dried before pressing, creating an extraordinary sweet and aromatic vinegar which is aged 18 years in ancient oak barrels used once for dessert PX and sherry wines.

Area of Origin: Módena area in Northern Italy.

Caroliva Módena Balsamic Vinegar is made out of Trebbiano grapes.

The must is concentrated and aged during 18 years in various casks of different woods to yield these unique and rich flavors.

Trebbiano is commonly known as ‘Saint Emilion’.

This Caroliva sweet PX cream is made out of the unique Spanish sherry wine Pedro Ximenez and grapes that are sun dried before pressing, creating an extraordinary sweet and aromatic vinegar which is aged 18 years in ancient oak barrels used once for dessert PX and sherry wines.

This delicious cream is prepared by boiling and reducing these magnificent wines until they thicken and the cream loses the alcohol.

Pedro Ximenez balsamic vinegar cream dressing is indicated either for meats, foie, vegetables dishes, as well as fishes.

Sherry Vinegar D.O. 12 years


Reserve Sherry Vinegar Aged 12 years.

Area of Origin: Andalusia, Spain (DOC Jerez).

Produced from sherry reserve using the traditional solera system in Jerez, the birthplace of Sherry wines. The solera system is the system to mature Sherry vinegar. The bottom row of casks, called the solera, is periodically drawn for bottling/sale.
